- 1 medium size pineapple or an 8 oz can of pineapple pieces
- 2 cups chicken flavored stuffing (mixed)
- 2-3 tablespoons butter or margarine
- 1 cup hot water
- 1/2 each of chopped red and green pepper
- 2 Tablespoons white vinegar
- 1/2 Teaspoon crushed ginger
- 2 pods of garlic (optional)
- Salt to taste

Method

Clean and put in order the chicken breasts by wiping it with kitchen paper and flatten it with your palms before placing it aside. Place butter in a large bowl and pour the hot water and stir until the butter has melted. Combine the stuffing mix with the chopped red and green peppers and half of the chopped and crushed pineapple pieces and stir in the melted butter until it is soft and well coated.

The combination should be divided into 4 portions and located on each halved breast of chicken and covered with the other half. Roll the chicken tightly and whether tie them up with twine or regain with toothpicks. The balance pineapple should be mixed with the crushed ginger, garlic and brown sugar while adding the vinegar until it has the consistency of a sauce. Pour the sauce over the stuffed chicken breasts and place it in a preheated oven set at 350 degrees for practically 1 hour or until it's done to your liking.

Your stuffed chicken is now ready to be served and it is the pineapple that gives this dish its unique flavor. Your house and friends will love this recipe for stuffed chicken.

If you do not like stuffed chicken with pineapple or if you happen to be allergic to it as some population are, you can all the time substitute the pineapple with herbs and onion for a salutary meal or with spinach and garlic, dried tomatoes and raisins, olives, cabbage or whatever else that will take your fancy.
